Strawberry Spinach Summer Salad

Description

This salad is light and surprising with it's sweet twist. It is an excellent option for potlucks. I usually get requests for the recipe!

Ingredients

¾ cup pecan pieces

Spray oil

½ small red onion very thinly sliced (optional)

10 oz spinach chopped

1 lbt strawberries cut in 1/4 slices

¾ cup feta cheese crumbled

Dressing

Use Ken's Steak House Lite Raspberry Walnut Vinaigrette Dressing & Marinade or make from scratch:

1 cup raspberry jam (no sugar added)

1⁄4 cup cold water

2 tbl red wine vinegar

1⁄2 cup walnut oil

1/2 tsp salt

Steps

1. Place pecans into small frying pan. Coat in spray oil and cook until browned. Set aside to cool.

2. Mix onion, spinach, strawberries, and feta in a bowl. 

3. Serve with Ken's dressing (or to make dressing, place in a container with lid and shake).
