Lamb Shawarma Gyros
Description
This was such a delight to eat on a warm day and it is perfect for those watching their health. Somehow this vegetable filled meal fills up your stomach without weighing you down.
Ingredience
Meat
1 pound ground Lamb
1.5 tbsp yogurt or buttermilk
1.5 tbl lemon juice
1.5 tbsp of olive oil
0.75 tsp ground paprika
1/2 tsp ground turmeric
1 clove garlic, minced
1/2 tsp fresh or ground ginger
1/8 tsp ground clove
1/2 tsp ground onion
1/2 tsp salt
1 tsp black pepper
1/2 tsp ground allspice
1/4 tsp cayenne pepper
Dressing
1 cup mayo
1 tbl lemon juice
1 tsp peanut butter
2 tsp Tapatio brand hot sauce
Gyro Toppings
1 roma tomatoes diced into less than 1/2 in cubes
1/2 large pickle, diced into small cubes
1/4 cup parsley roughly chopped
1/4 cup red onion, finely chopped
1 tbl fresh mint (optional)
1.5 cup shredded cabbage or romaine lettuce
Serve with pita bread (4-5 servings)
Steps
1. Mix meat ingredients in a bowl and flatten into a oil sprayed cookie sheet. Bake at 350 until done. Set aside to cool.
2. Mix gyro toppings into a bowl. Mix dressing in another bowl. Slice cooled meat into small strips.
3. Serve on pita bread cold by layering the meat first, then the topping, and generously top with dressing. Pairs well with Lisa's Mediterranean Cucumber Salad.
