Fried Okra in Cornmeal

Description

I positively love this recipe. The cornmeal adds an extra crunch to the okra and it pairs nicely with Buttermilk Fried Chicken.


Ingredients

1 lb fresh okra

2 eggs

1/2 & 1 tsp salt 

Oil for frying

1.25 cups cornmeal

1/4 cup flour

1/2 tsp pepper

1/4 tsp cayenne


Serves 4-6.


Steps

1. Preheat deep fryer to 375 degrees.

2. Trim okra stems and tips and cut into 1/2 inch rounds. 

3. Lightly beat the eggs with ½ tsp salt and soak okra in this for 10 minutes.

4. In a bag or bowl, mix cornmeal, flour, and 1 tsp salt, pepper, and cayenne. Add okra to coat.

5. Ad okra to fryer and cook until golden brown. Cool and serve.
