Lisa's Signature Omelettes


Description
I love eggs and especially omelets. The trick to a good omelet is not overcooking the eggs and adding the cheese at the end. It is also helpful to prepare the filling ahead of time because the eggs are so easy to overcook. My signature omelet is identified by the shap of the pan I use. I use a small pan that creates thick, fluffy outside and you get the fun factor of a pan-pizza feel.

Ingredients
2 eggs, beaten
1/4 cup cheese
Spray oil
1/4 cup filling, varies

Mexican Omelet Filling:
1/2 jalapeno, finely chopped
2 slices bacon, chopped
Garnish with avocado and sour cream

Step 1
Warm 4 inch pan on a low heat. Spray with oil and pour in eggs. Cover with a lid.

Step 2
Once eggs start to change color, remove lif and lift pan from heat. Roll the eggs around in the pan and return to heat. Repeat this process until eggs are cooked but bearly.

Step 3
Drop in filling and cover until eggs are cooked through. Make sure to keep off of heat as needed so the eggs do not brown. Cover with cheese and fold in half.

Step 4
Garnish and serve.
