Cajun Rice


Description 
This super yummy side is a great way to use leftover rice. If you love peppers and cajun food like I do, you will love this! 

Ingredients
2 tsp olive oil
2 cloves garlic minced
4 baby sweet peppers, diced in 1/2 inch squares
1-2 jalapeños, diced in 1/2 inch squares
2 tbl tomato paste
2 cups white rice (cooked)
1 teaspoon Cajun seasoning (I like Tony Chechere's Creole Seasoning)
2 tablespoons lemon juice
2 green onions, chopped diagonally 
1/2 cup canned black beans, rinced and drained (optional)

Directions 
Step 1: In a bowl, mix the rice, Seasoning and lemon juice. Set aside.

Step 2: Add oil, peppers and garlic to a laged pan and sautee until desired. Stir constantly to avoid burning the garlic.

Step 3: Add rice mixture to the pan and stir until everything is warm. Add beans and green onions and serve.
