White Bean and Spinach Shrimp
This is a healthy option that is easy and quick. You don't even have to be good with knife cuts. This would be good to serve with ziti pasta or rice. However, I served it with cauliflower mash in this image.
Ingredients
2 tablespoons olive oil
1 small onion, sliced in 1/2 in cubes
6 clove garlic, thinly sliced
1 teaspoon oregano seasoning
2 tsp salt
1 tsp black pepper
14.5 oz can diced tomatoes
1 lb shrimp, peeled and deveined, tails removed
14.5 oz can cannellini beans, drained and rinsed
2 packed cups baby spinach, chopped
1/2 cup crumbled feta cheese
Directions
Step 1: Heat the oil in a large skillet over medium-high heat. Add the onions and cook, stirring occasionally, until softened and just starting to turn brown in some spots; approximately 4 to 5 minutes.
Step 2: Stir in the sliced garlic, oregano seasoning, salt and black pepper, and stir until the garlic is softened; about 1 minute.
Step 3: Pour in the tomatoes and bring to a boil. Reduce the heat to medium and simmer, stirring occasionally, until the tomatoes are slightly thickened; approximately 2 to 3 minutes.
Step 4: Add the shrimp and beans and cook, stirring occasionally, until the shrimp just start to turn pink; approximately 2 to 3 minutes.
Step 5: Stir in the spinach and continue cooking until the spinach is just wilted.
Step 6: Remove the skillet from the heat and sprinkle the feta over top. Cover until the cheese is warmed through, 2 to 3 minutes. Serve immediately.
