Cauliflower Mashed Taters
This is a creamy, low calorie way to get a mashed potato fix. Salt is key to making this tasty. It's very easy to make too!
Ingredients
1 Cauliflower head, chopped
1 med potato, chopped
1 Tbl olive oil
6 cloves garlic, smashed
¼ cup parmesan
1 Tbl sour cream
2 tsp salt
1 tsp pepper
Directions
Step 1: Steam cauliflower and potato for approximately 10 minutes.
Step 2: Heat olive oil and sliced garlic for about 2 mins. until softened.
Step 3: Mash ½ of cauliflower/potato pieces in a food processor
Step 4: Add garlic, oil, parmesan, salt, and pepper and remaining cauliflower/potato slices and blend again until smooth. Serve.
