Lisa's Steak Fajita Soup
This spicy and hearty soup is great for any occasion. It's meant to be 6 servings but my family of 4 devoured it in one sitting! The smell is heavenly too. If you use leftover steak, this soupd is super easy too.
Ingredients
Steak rub
1/2 tsp Kosher salt
1/2 tsp finely ground black pepper
1/2 tsp onion powder
1/4 tsp cayenne
1/2 tsp dried oregano
1/2 tsp dry rosemary
1/4 tsp dry sage
Soup
1 (15 ounce) can seasoned black beans, rinsed and drained
1 (14.5 ounce) can diced tomatoes
1.5 cups steak strips, cut into bite-size strips
1 (15 ounce) can tomato sauce
1 small onion, chopped
2 jalepenos, chopped finely
½ cup milk (can use soy, heavy cream, etc.)
2 tablespoons ground cumin
3 cloves garlic, minced
1 tablespoon lime juice
1 tsp red pepper flakes
½ cup long-grain white rice, dry
1 cup shredded Monterey Jack cheese for topping (optional)
Directions
Step 1: Mix steak rub ingredients and rub into steak. Grill until medium rare.
Step 2: Combine all soup ingredients except cheese and simmer for 30 minutes.
Step 2: Garnish soup with Monterey Jack cheese and serve.
